Steph's Nourishing Shepherd's Pie

This weeks recipe is a nourishing & healthy Shepard's Pie from Steph Gobbo.
Using our organic lamb mince & beef bone broth/stock, and six vegetables. 

The cooler months are such a great opportunity to use food as medicine and some hero immunity ingredients all while nourishing the whole family. 

 

Serves 5-6 | 70-80 mins

Ingredients:
Beef mix:
500g lamb mince (Can also use beef mince if you prefer)
A drizzle of Extra Virgin Olive Oil
1 small brown onion-finely chopped
1 garlic clove crushed
2 medium carrots - finely chopped
2 large celery stalks - finely chopped
1 cup of mushrooms - chopped
2 dried bay leaves
1 heaped teaspoon of thyme
3 tablespoons of tomato paste
2 tablespoons of plain flour (or GF)
½ cup red wine
1/2 cup beef bone broth
1 cup of frozen peas
Salt and pepper to season

Mash
4 Desiree potatoes, peeled and cubed
1/2 medium sweet potato, peeled and cubed
½ cup milk of choice
1-2 thumb sized knobs of butter
½ cup of grated cheddar cheese
½ cup of grated mozzarella cheese
Salt to season

Method:

  1. In a large casserole pot, pop on the stove and once heated, drizzle some olive oil and lightly fry onion and garlic for 5 minutes.
  2. Add carrot and celery and further cook for 5-10 minutes until soft.
  3. Add mince and break down with a wooden spoon to cook evenly.
  4. Add broth and red wine and turn down to a simmer.
  5. Then add tomato paste, mushrooms, peas, bay leaves, thyme and season well with salt and pepper, stir then add flour. simmer for 20 minutes.
  6. While this is simmering, create your mash. Steam chopped potatoes and sweet potatoes until soft, this will take at least 10-15 minutes. Add to a large bowl and mash well with milk, butter and a sprinkle of salt.
  7. Preheat the oven to 180C.
  8. Remove beef from the stove and flatten out evenly in an oven proof rectangular dish.
  9. Let it cool slightly for 10 minutes before adding the mash but this step isn’t imperative.
  10. Scoop mash on top in sections and carefully cover the beef. Using a fork, streak the mash and then sprinkle the cheese on top.
  11. Put into the oven and bake for 20-30 minutes until the top is golden. Feel free to grill the top at the end for 5 minutes to make the topping nice and crispy.
